Of course you can play around and add different kinds of vegetables to the mix.

For the dressing, you can play around with different types of vinegar, each adding a different flavorful note to the salad.

This refreshing and aromatic orange cucumber salad can be enjoyed as a main dish or as a side for your next pizza evening.


  • For the salad
  • 1 cucumber
  • 12 cherry tomatoes
  • 1 orange
  • 1 can kidney beans
  • 2 tbsp pumpkin seeds
  • 8-10 basil leaves
  • For the salad dressing
  • 1 tbsp olive oil
  • 1 tbsp white wine vinegar
  • Juice of 1/2 lemon
  • 1 big pinch salt
  • 1 big pinch pepper



Cut the cucumber into small cubes, halve the cherry tomatoes, peel the orange and cut into small cubes. Add all to your salad bowl with the kidney beans.


Add the pumpkin seeds, break the basil leaves by hand and sprinkle on top.


Mix the olive oil, vinegar, lemon juice, salt, and pepper.


Sprinkle dressing on the salad, mix well.
