This bowl is light and full of healthy ingredients. The quinoa and beans add protein and fiber, the avocado and olive oil healthy fats, while the arugula and veggies take care of the vitamins.
You can adjust the avocado cream to your liking. If you want it more liquid, simply add more water. If you like it spicier, add more chili powder.

- For the bowl
- 1 cup quinoa
- 1 tbsp vegetable stock powder
- 1 cup cherry tomatoes
- 1 ripe avocado
- 1 yellow bell pepper
- 1 cup kidney beans
- 1 pack arugula
- For the avocado cream
- 1 ripe avocado
- 1 clove of garlic
- 4 tbsp olive oil
- Juice of 1 lemon
- 1/2 cup of water
- 1 pinch of salt
- 1 pinch of pepper
- 1 tsp chili powder (optional)
Soak the quinoa in water for 4-6 hours or overnight. Wash with water.
Boil the quinoa in salted water with the vegetable stock for 15 minutes.
Cut the cherry tomatoes in half, slice the avocado, dice the bell pepper.
For the dressing, add the avocado and garlic to your blender, add oil, lemon juice and water. Season with salt, pepper and chili powder. Blend well.
After boiling the quinoa, rinse with cold water, then mix with arugula.
In your serving bowl, add the arugula and quinoa. Top with cherry tomatoes, yellow bell pepper, beans and avocado.
Drizzle the avocado cream on top.
