Sweet and Sour Mango Salad

When it’s hot outside, there is nothing more refreshing than enjoying a healthy and colorful salad. 

This sweet and sour mango salad is the perfect salad for hot summer day. 

The mango adds a sweet and fruity element, the tofu some smoked flavor, and the salt and coconut blossom sugar bring out the overall flavor. 

Of course, you can adjust with whatever fruit and vegetables you like.

This sweet and sour mango salad is perfect for hot summer days to give you a refreshing break. Healthy, nutritious and super delicious.

Ingredients

  • For the salad
  • 1 mango
  • 2 carrots
  • 1 cucumber
  • 8 cherry tomatoes (or 2 large tomatoes)
  • 1 block smoked tofu (optional)
  • 1 cup mung bean sprouts (or other sprouts)
  • For the dressing
  • 1 clove of garlic
  • 2 stalks of spring onions
  • 3 tbsp soy sauce
  • 3 tbsp apple cider vinegar
  • 3 tbsp olive oil
  • juice of 1 lemon
  • 1 tsp coconut blossom sugar (or your preferred choice of sweetener)
  • 1 pinch of sea salt

Instructions

Cut the carrot and cucumber into small, thin slices. Peel the mango, get rid of the core and cut the mango into thin stripes. Quarter the tomatoes.

To prepare the dressing, mince the garlic and slice the spring onions thinly. Add the soy sauce, vinegar, olive oil and lemon juice, top with sugar and salt. Mix and let sit for 5 minutes.

Pour the dressing over the salad, mix well.

Notes

If you don’t have mango, you can always use another fruits such as apple or pear.
