Coconut Mango Chia Pudding

Have you ever tried making chia pudding with coconut milk?

It will enrich your breakfast with this slightly exotic flavor and blend perfectly with your chosen fruits.

If you don’t have mango, just take your favorite type of fruits instead. 

As it is rich in proteins, fiber, omega-3 fats, and more, a chia pudding is probably one of the best breakfast options out there.

There are so many ways you can make chia pudding. In Thailand, we discovered the combination of chia seeds and coconut milk. It brings out a slight exotic flavor and goes really well with any kind of your favorite fruits, nuts and seeds. We chose mango here, and you can go for whatever fruits you like. Berries, for instance, will also work amazing.


  • 0.5 cups chia seeds
  • 1 cup coconut milk
  • 1 cup water
  • 1 tbsp cinnamon
  • 1 tsp vanilla extracta/vanilla flavor
  • 1 ripe mango (or your choice of local fruit)
  • To decorate
  • 2 tbsp sunflower seeds
  • 2 tbsp granola



Add the chia seeds, coconut milk and water to a bowl.


Add the cinnamon and vanilla extract, stir well.


Let it sit for 30 minutes.


Peel the mango and slice it into cubes.


Prepare your glasses: Fill the glass to half with chia pudding, then layer mangos, then top off with more chia pudding. Sprinkle sunflower seeds and granola on top.


Leave it in the fridge for at least 1 hour.




You can use whatever fruit you like and top the chia seeds with your favorite type of granola, nuts or seeds
